Les Vignots

Ermes Pavese made the bold decision—still uncommon in this corner of the Valle d’Aosta—to begin bottling his own wine rather than selling off the fruit from his tiny then-two-hectare farm to the local co-operative

2017 Marie Courtin Coteaux Champenois Blanc du Tremble Raveneau The fermentation takes place withA single parcel in Polisot named Le Tremble. The 50 year old vines are facing east facing and planted by massale selection. Vines are approximately 40 years old. Grapes are lightly pressed and native yeast fermentation occurs in two 5hl amphoras, one in clay and one in sandstone. Malolactic fermentation completes naturally. The wine is bottled unfined and unfiltered.
