Harvest & Vinification

NV R. Pouillon & Fils Grande Vallée Extra-Brut Champagne, France [2024] Paul Pillot made from grapes picked sevenGrand Vallee is taking the place of Fabrice's NV Brut Reserve. The most important difference is the secondary fermentation is only done with natural grape juice with active yeast. A radical turn for sure. This is a delicious blend of 65% Pinot Noir, 20% Chardonnay and 15% Pinot Meunier from the clay and chalk soils of the Vallee de la Marne.
